So I am wondering, if we like a widget from one theme and it is not defaulted to show in another, can we simply dig into functions.php of the theme with the widget and copy the code to the other theme and the widget should show up?
Yes as long as you are applying the right functions for that widget.

Yes it should be pretty simply because most of the child themes are very similar in functions. But remember all the new themes being released by StudioPress are all HTML5 ready so things might need tweeking..
