    I’d like to build a sit with similar functionality to fab.com (the grid layout, sliders, etc).

    Could I use WordPress and Studiopress and some specific plugins?

    Just wondering if this job may be over my head or not.

    Wow, you’d need some serious customization to get to that. But if you want to maybe try – you could use the Bee Crafty theme (http://my.studiopress.com/themes/beecrafty/), and then use the WooCommerce plugin (http://wordpress.org/extend/plugins/woocommerce/) along with the Genesis Connect Woocommerce plugin (http://wordpress.org/extend/plugins/genesis-connect-woocommerce/).

    Try customizing it to see if you can get it to do what you want it to do.
