I want to remove the dates from the posts on my blog and I don’t want to have to do any coding. I have installed the Genesis Simple Edits plugin. Would simply removing “[post date]” from the first line on the Genesis Simple Edits plugin, which is Post Info, work? I see that by removing “[post date]“, the date doesn’t show on the posts. I am interested in knowing if doing this could cause any issues with the functionality of my sight. Are there any issues that you can see? Does doing this impact SEO? Do you know if the date will still show in the search engines? Thank you.

Yes. Remove the post date shortcode.

SEO questions are better asked on the Google Webmaster Forums or Stackexchange webmasters forums.
