Hi there,
I'm pretty new (BRAND new, actually) to the world of WordPress and muddling along as best I can.
One thing I can't seem to understand is the need for an RSS feed. I have attempted to install one anyway, but not sure if I've done it correctly (see previous re not sure what the need for it is therefore not clear on how to determine whether what I've done is how it's supposed to be done etc.).
So:
1) Is it essential
2) Why?
3) Could you have a peep at my site and confirm if I've done it correctly?

You don't need to install a RSS feed.
WordPress automatically creates a RSS feed for your website.
You can access it at http://chilterngirl.com/feed/
RSS feeds are not that popular anymore (especially since Google closed its RSS Reader) but you can use it to send new blog posts to your subscribers by email (with MailChimp or most other Autoresponder services).

I too have setup with MailChimp. My website is not live yet as I want to setup everything first. I tried the /feed and entered it into MailChimp but MailChimp tells me its not a valid RSS feed. Is that because my website is not live yet? I did get the mail signup to work fine, so I thought this would too. Is there something I need to do in the Magazine Theme to setup RSS?

no, WordPress will automatically create the feed.
I would guess that Mailchimp can't pick up the feed because your site is not live.
You can test that by accessing /feed on your computer.
If you can see the feed, you are probably good to go once the website is live.
If you get an error message or blank screen, something is wrong with the feed.
