As I said, it will note Genesis as the parent theme, but if you make the changes in the appropriate places in your stylesheet and swap out the screenshot (making the change in the footer is not enough as that only effects the footer), it will show Custom Theme for the child theme info.
For example, I used the Rainmaker site to demonstrate. You'll see the info it shows for the site / child theme (note the custom screenshot, as I mentioned) --

As I said, if you don't want a client (or someone else) to know you're using Genesis as your PARENT theme, you'll need to use something else. With Genesis (or any other parent theme) in use, your stylesheet will reference that parent theme in the appropriate place.

I appreciate your feedback (as do other Genesis users, I'm sure); however this support forum is run by volunteers who are composed of Genesis users like you and I. I think your suggestion / inquiry is best directed to the theme developers at StudioPress, which you can do via official support on your account dashboard (send a message).

As long as you're using Genesis as a parent theme, the Genesis / StudioPress info will show up under parent theme details. If you change the appropriate info in the style sheet, your custom details will show up under child theme details. It will say custom theme and have links to your URI as theme author.

To adjust the line spacing, you can use this code:
.vc_btn3-container.vc_btn3-center .vc_btn3-block.vc_btn3-size-md { line-height: 1.25 (the value I used, but you can play around to see what works best for you). }
I see you're using a page-builder (Visual Composer?) on the site, and I'm not as familiar with the code it generates, so this is a bit of a guess with regard to the class.

I don't know of a non-CSS related fix for this, but I can suggest a bit of a workaround. Use just one widget in the sidebar, adding all of the content in one. You can tick off the AUTOMATICALLY ADD PARAGRAPHS option to add line breaks (you can additional line breaks, as well).

If you're talking about not having received a response here, please know that this is a volunteer-operated support forum and that the StudioPress people generally don't respond to or see questions here. That said, I will do my best to answer your questions:
1. There is no difference between the SEO settings in News Pro or Metro Pro. This blog post is a bit dated, but it does provide a good overview of the SEO settings and screenshots.

As I'm sure you're aware -- the BEST SEO is well-written, consistently published content. There is no magic theme or shortcut to SEO, and even the best theme or plugin would still require you to publish quality content on a regular basis.
2. StudioPress (post sale) support is truly amazing; I did not have pre-sale questions about the framework, so I have never used support pre-sale. Regarding post sale support, I have received responses late at night and on holiday (though that may be out of the norm), and I found the reps to be helpful and knowledgable in their replies. If you are attempting to get pre-sale support, please check to make certain you are using the right contact information / form.
3. If you buy the Genesis framework, as you said, you will receive the Genesis Sample theme (which you can use as a starter theme) with it. Then, you'll see a discount to purchase other StudioPress themes in your account dashboard. I believe the returning customer discount makes future theme purchases around $35.

Just to confirm the steps you've taken so far --
1) Enqueued the font properly, changing the required line in the functions file. In Daily Dish Pro, you'd be changing line 23 to this:
wp_enqueue_style( 'daily-dish-google-fonts', '//fonts.googleapis.com/css?family=Droid+Serif:700|Lato:400,400italic,700', array(), CHILD_THEME_VERSION );
This enqueues only the bold (700) font-weight for Droid Serif and normal (400), normal italic, and bold (700) for Lato.
2) Declared the font correctly in your style sheet. In Daily Dish Pro, you'd be changing line 241 to this:
font-family: 'Droid Serif', serif;
Can you try that to be sure you didn't forget a plus sign or apostrophe anywhere? These things are super sensitive at times! 🙂

Your question seems to be more related to plugin functionality as that would not be something that a StudioPress theme (or any other theme) would manage / handle. That said, I would investigate using something like Easy Digital Downloads with some of its add ons to restrict the ebook downloads.

When you change your theme, you'll have to re-upload (sometimes resizing it first) the header image / logo. You'll also likely need to place the menu / navigation in the correct location.
Each theme has the header image (or site title) and menu coded in a different way. Sometimes the menu location is primary navigation; sometimes it's header right. Here are the setup instructions for Enterprise Pro --

To create a static home page, you'll need to create a front-page.php file, adding your widget areas and body classes there. If you have another Genesis theme, you can take a look at the functions, front page, and stylesheet files to see how to format / code a static front page.

The 'basic child theme' is Genesis Sample Theme, which looks (and functions) like the demo you see of the framework. I believe it's the one that comes with the framework for free (but I don't exactly remember as I bought it years ago).

For a more advanced user (into task runners, i.e., Grunt), there's a free starter theme called Bones for Genesis.

My other suggestion regarding making customizations is to always put your custom styling ABOVE media queries. Things sometimes get a little wonky when you put custom styles below the media queries.

Are you using the featured page widget there? If you are, there's a setting within that widget to show (or hide, depending on checked v. unchecked) the page title. If you're using the featured page widget there, you can try that.

I'm not seeing the CSS for the responsive menu in your stylesheet. I see your media queries at the bottom, but not the CSS for the hamburger menu. You might have deleted the code when you went through to make your customizations. If you add that code back, the hamburger menu should show on mobile.
