If own a Genesis theme that has different homepage style and you want to use it, just copy that front-page.php file into your child theme. With few adjustments it should work.

One more thing, did you check compression code / plugin when all other plugins are disabled. It is known that other plugins over-ride compression settings.
It is not Genesis related, WordPress itself does not seem to disable JPEG compression even when specific code and plugins based on that code are used. In the past also, I have encountered many users with similar problem. Will research and get back.
You can try this plugin / code on default WordPress install using official 2014 theme to confirm if it is Genesis issue or otherwise.

That header option depends on theme your are using. As such that Genesis Guide is showing screenshots of old Genesis version.
Since you are using Focus Pro theme, it supports custom header option. Look for "Header" option under Appearance menu to upload header image / logo. Still issue, update this thread.

I understand, you are talking about primary and secondary menus. For that goto Appearance > Menus section. There you can create new menu or use existing menu. Just check the primary / secondary option under menu there to be displayed at respective location.
If you are talking about showing menu next to header logo at top right. Then goto Widgets, drag custom menu to header right section and select menu that you want to display.
