The easy question first: Regarding editing or expunging post info from your site, go to this Genesis tutorial page on just that:

Any time you address WHAT displays on your site, it has to do with the "engine" and the loop and should be done through the functions.php file. CSS is about the HOW things display-- the "fashion" in which the information shows (font, color, columns, line-height, backgrounds, etc).
So just study the linked page above and it will show you oodles of ways to change, edit, or delete the post info from your site.
Now, regarding getting snippets of posts to display-- I actually have full posts displayed on all of my "blog" pages, which are really category pages as explained in the 3rd post in this thread. If you're talking about what's showing on my home page, I have a custom static home page on which I created some custom dedicated sidebars. In one of those sidebars, there are three static blocks of text as intro copy to my three main category pages to which they are linked (but I haven't gotten around to building those pages yet!).
BUT, I'm sure there's a way to do what you're trying to do. I just don't have an answer this second. Kind of learning as I go. You'll have to post that question in the forum. Just start a new thread!

I finally figured it out. After combing through the WordPress Codex and coming up with all this code, I started seeing the familiar strings in the Genesis backend.
Silly me-- If you go to the category that you want to BE the page, and EDIT that category, scroll down..... and voila! There's a new idiot-proof (well, maybe not-- I almost tripped up!) form field entitled "Archive Intro Text". Put yer into copy right there. If you want to do some snazzy styling, wrap it in your own div and give it a class like "category-x-intro" to be specific to that category, or just "intro-copy" if you'll style ALL category intro copy the same way.
Note: You are NOT creating a category page in the "add new page" function. You are NOT selecting any template from the template drop-down. (If you even have that option, then you're doing it wrong). A page will be created automatically if you just create the category. It is basically an archive page. (I customized mine by eliminating the post_info on these since I didn't want author or date info.)
If you want this page to be linked in your main menu, just make sure you put the category link in your menu.
Lastly, just know the url to this category page will be http://www.yoursite.com/category/category-x.

Evidently, I had to ask a question, in order for my avatar and name link to show, in order for me to click on it, in order for me to get to my profile, in order to edit it.
How's that for recursive?
