Try this. Add it to style.css or the WordPress customizer:
.single-portfolio .content { width: 100%; }
If you add it to style.css, make sure you add it after this code at line 4524. This is what's controlling the width now.
.single .content, .contact-page .content { width: 768px; }

This forum is for the Genesis Framework and Studio Press themes. Studio Press Sites is another product altogether and supported through WPEngine these days. Regardless of whether a plugin is recommended or not, 3rd-party products, even community marketplace themes sold on this site, are supported by their developers, not the community volunteers that regularly answer questions on this forum. We're end users just like you. We just happen to love working with the Genesis Framework and want to help where we can.

It sounds like you missed a setting in the Ninja Forms plugin.
As volunteers dedicated to answering questions about the Genesis Framework and Studio Press themes, it's hit or miss that someone here might be using the same 3rd-party plugins as you. It's best to ask the plugin developers rather than post here and wait for a response that may not be forthcoming.

To get the count in the bottom bar, you have to hook it into the entry footer.

If that's the case, you have to provide more room for the menu.

By the way, my site uses Academy Pro also, I originally had the search in the menu, but it proved to be a problem with mobile devices. Take a look at my site and see where I decided to add the search.

You may have to redefine widget content as that varies from theme to theme, but the core data, posts, and pages are all the same.

The values of custom fields are displayed with the WordPress get_theme_mod function. https://codex.wordpress.org/get_theme_mod
This WordPress function includes a filter that you can use to return different content than what is entered into the customizer. The syntax for the filter is:
add_filter( "theme_mod_{$name}", $default );
When you add your filters to the theme's functions.php, it should look something like this:

You'll have to figure out the language detection part, but this should at least get you started.

It is a buggy, buggy browser that will no longer receive feature upgrades from Microsoft. While it is still included with Windows 10, even Microsoft says to use Edge.
IE 11 doesn't correctly support position: fixed;. If you Google "IE 11 position:fixed" you'll find ample examples of workarounds that you can try, but if you've got customers locked into IE, I would encourage them to upgrade. If so, remove transform: translate3d(0,-3px,0); from style.css in the following CSS around line 513:

I don't see the orange on either, nor do I see it in the page's source code. The issue could be related to a specific browser or even to the monitor's calibration. I wouldn't worry about it because I don't think anyone else will be able to see it.
