Just as if you were migrating a site from one domain to another, you are doing the same thing when you are moving it locally. BackupBuddy (BUB) makes this extremely easy for people not as familiar with SQL import/exports. Also, if doing manually, you would need to run a RegEx on the links to switch the base domains, etc. However, BUB takes care of all of this (but depending on various setups, you can have some issues). The iThemes forum support on BUB is quite extensive.
wpsmithMemberPlease let me clarify "correct." If custom header is activated, then the correct method would be to use the Custom Header. If a child theme enables it as a feature of that theme, then the child theme would be customized with the custom header. However, all child themes have the option as was previously noted that they can remove custom header functionality. Then the "correct" method would be to use CSS styling and the Genesis Theme Options.
Some clients, at least some of my clients, want me to set a default header, but they want to be able to change that header for the various seasons. So I will enable the custom header, set the default header and the appropriate size for just the header. Then the client is instructed via the README how to change the header for whenever they want to change the header. I also provide a templated PSD file for them. However, once the site is launched and out of my hands, I can care less what they do.

However, best practice is to have a staging setup (that holds a clone of your live site) that you use for testing and modifications. WPEngine has a one-click button for this, which makes them such a great WordPress host. However, other cheaper hosting places allow you to have multiple installs. You can also install MAMP or XAMPP if you'd like to do it locally. There are a lot of options. You just need to find what fits for you.

wpsmithMemberWhen you say Yoast, do you mean WordPress SEO? If so, you will need to use SEO Data Transporter to get your data out of the plugin for use in Genesis.

Actually WordPress solves this for you. It assigns the class .current-menu-ancestor. Also, you can solve your issue with JS.

wpsmithMemberIf you only want one category that you'd like to display all content, I would set the setting for excerpts. Then in functions.php, I would write up some code to display the full content of the other category. However, just as Bill noted, without knowing further where and when you'd like to do this, we cannot give you the best code.

Yes, there is. You will want to use conditional tags via functions.php if Genesis Simple Edits does not work for you.
Looks like I cannot exclude categories from the Post Categories widget. Is that true?
If you mean the categories widget, out of the box via the widget GUI, you cannot. However, you can via functions.php.

Can I add a preface to a category? Text that explains what the reader will find when looking at entries in this category.
This is already built into Genesis. Go to the Category inside WordPress and edit the category. Then add introduction content or a custom headline.

wpsmithMemberHave you placed an image called menu_highlight.png in your child theme images folder (that's what your CSS is calling)? If you made a *.gif, then it probably won't work calling a *.png.
