You'll get some better responses posting in the multiste section of the WordPress forums. None of what you;re asking for is theme dependent.

That being said: ;)

I need to create an MU environment with the ability for a remote site to select from a pre-built list of about 5 different StudioPress themes all configured, where we just drop in a pre sized logo.
you'd need a custom plugin for that.

I need the main site to feed content to specific area of the the other clubhouse site.
multisite does not push posts ot the sub sites very well, but this helps - http://wordpress.org/extend/plugins/threewp-broadcast/

I wish there was a WishList members for MU, I have not found a membership plugin for MU yet.
Have you looked at s2members?
http://wordpress.org/extend/plugins/s2member/
http://wordpress.org/extend/plugins/wp-members/
http://wordpress.org/extend/plugins/membership/

Also, it's not called MU anymore so that will help you find what you;re looking for. THen again, you're not really saying what you need to have multisite specific. Lots of people using membership plugins on multisite.

We will also need each clubhouse to have their own buddypress installation.
By default, BuddyPress is active network-wide. you cannot have each sub site run their own separate BP install. Everyone will be added to the WHOLE network. You can get close with multiple networks and this plugin but it is for advanced users.

Where can I get step by step instructions as to how to set something like this up?
Likely nowhere, as what you want is custom, so unless someone like me gives the step by step, most of it you'll need to figure out on your own or hire someone to do it for you.

In your opinion is this the best for WPMU instructions: http://premium.wpmudev.org ??????
In my experience, and from reading their public threads, they will only help you if you are using their plugins. They will not help with anything else.
