Default Basic Question: Image LInks in Child Themes

Please forgive the basic question but I'm evaluating Genesis and I'm trying to figure some things out ahead of time. I did read the basic guide from the support section, but I plan to create custom themes (or at least try to) so that's why I have the question.

I was watching a video tutorial (not on this site) about customizing a genesis child theme. In order to insert the logo for the site, the tutorial added the logo as a background image using css. In the past when I have coded by hand, I've always put the image in as an <img> tag in the XHTML, etc. and then styled it or controlled it via CSS.

So when you are using genesis, are you customizing the XHTML or just the CSS? Because when the example added the logo as a background image, that takes away the ability to make the logo image "clickable" for example, and makes you unable to do things like add ALT tags.

What am I missing?
