Well, since the thumbnail image is simply the first image in the post gallery, you'd need to change that so the thumbnail is what you want. Go into the post gallery you want to change, upload a new image, and assign it #1 in the gallery tab. That should correct it.

In terms of re-ordering the posts, they're pulled by date, most recent first. You could edit publish dates to adjust the order.
