This is the default content which is displayed when widgets aren't used in sidebar_right.php. The easiest thing to do is use widgets in this sidebar to replace this content with something else.

Same thing - add a widget to sidebar_left.php and this category list will disappear. You can then add a Catgories widget to sidebar.php to display the categories in the top, wider section of the sidebar.
