Yes, you will need to update WP to 3.2 before installing Genesis. And switching to Genesis and the Church/Lifestyle child theme isn't really an update per se. It's just like installing a new theme, i.e. any customizations you have made will need to be redone in the new theme and the theme will need to be set up. And the Church Child theme has been discontinued since Lifestyle and Church were exactly the same except for their graphics but you could most likely still get a copy of the Church child theme by using the contact form.
