The menus are nothing more than nested unordered lists. You can see that by looking at the source code for the page. You have two choices. Create the Reviews menu manually and change it each time you add or remove a review. Or program a solution which will do it all automatically.

The programming would probably be pretty advanced and you would have to set up some rules about how review categories were to be maintained. But it could be done. One of the StudioPress Approved Designers could probably do it.
