I hear you. It's a jungle out there. Lots of themes. No perfection.
Personally, I find 'responsive' to be highly overrated. It's a solution looking for a problem. Sites built for a Mac or PC browser usually display perfectly on the iPad (or any recent WebKit browser). The only real issue with the iPhone is whether to create a truly mini-mobile version of a site. Or not. If not, only a few adjustments in text size are usually required. Content portals are a different issue (not easily resolved with Responsive). Why not Responsive? It's another layer of complexity and, so far, yields very inconsistent results. I specialize in content sites which can be viewed fine on iPhone-sized screens, and with a double-tap, the text column zooms in to a quite readable size.
