Hi,
Not sure I quite understand what you mean by "self hosted". As for backing up, I always use FTP and download the theme file(s) into a folder on my local machine (naming the folder with the date of the download). I make the edits using Filezilla's (FTP client) View/Edit facility to edit the "live" files. If I screw up, I can then upload the previously backed-up file and start again. Hope this helps.
