I can't think of anything offhand that's been done for a University type site, but if you let them have a look at some of your favorites from the showcase (in the dropdowns when you mouseover "About Us" at the top of the page) there are plenty of examples to show them. If anything will sell them on the benefits of using the Rev themes it will be seeing what others have done with them :)
