Yes. They show drop down sub-pages and sub-categories up to 3 levels deep.

All of them do. On single bar menus, like Black Canvas and Album themes, the categories are on a drop down list.

You can hide or change the name of menu items by changing code, using a plugin or writing a WordPress filter.
