Is a Custom Excerpt possible?

Hi,

I like the ability to control when my excerpt will be cut off. The option to change the length doesn't suffice because it's different for every post.

Wordpress offers the option to have a custom excerpt... but when I put my text in the field (box), no 'read more' link shows up - only the text.

Is there a way for me to use the wordpress excerpt option and get a read more link?
