Default Hard Code a Menu Item

searched for this but did not find ...

how can a menu item be hardcoded? -- i would like to have a child page link to a category archive page -- i can hide the category page from the nav bar yet still write posts to that category -- then have the information accessed via a page child menu (through a hard code of the menu)

hope this makes sense
