Multiple categories appearing under Blog section

Hi,
right now I have The Blog Section showing a category I called News. But I plan on having multiple categories and so would like it to show all my categories, minus the one that is being used for the Home page Featured and More sections.

for example, my latest blog text post "tv blooper" with category set to "Hockey video blooper" is appearing under Recent Posts in the sidebar, but not the blog section.
