Default Building for Touch Screen — thoughts?

Hi,
I am about to build a website that only will be accessed from touch-screen computers in tourist "kiosks." Is there a particular plugin that will be useful for this so nothing needs other than a touch to work? And how about if there's a "Sign Up" feature on the site? Is there a feature that can load an on-screen keyboard so the visitor can punch in his/her name?

Is there a specific theme that makes this simpler to do? Should I perhaps just use a mobi-site plugin and resize for the larger screen?

I've never done this for touch-screens before and any help would be much appreciated!
