Variables for category and tags to show?

Hi,

as I'm not a programmer, I'm struggling with the following challenge: I want to write some text with a variable of a category/tag. Reading the code I found "<?php the_category(', ') ?>" but with that command I have a hyper link, which is annoying me. Is there a comparable variable/command without it?
