Creating Categories

I've just begun creating my site, and in the process of creating categories have come across a dilemma. I created a category that is showing itself on the entire home page under each category box. What should I do to fix this? When I go to the Categories box, I'm unable to eliminate that category though I can do so for the others. Where did I go wrong?

I was merely establishing the several categories for the site. Thanks.
