Default Four different blogs in the same theme...

Hi again!! This is what I would like to do:

Have four (maybe more in the future) different blogs in the same site. In the theme options I only have the possibility of defining the cat. for the blog_template (just one). I guess I would like to know how I can mod. the theme options to display possibility of assigning cats. to different blogs-templates. I guess I will also need to create new blog templates for that..

Taking into account that my code skills are very limited (close to non-existent), could this be done in a simple way?
