Add 'blog' category as a link in Header

Really like this theme but I have a question that I just can't figure out:

Black Canvas 3.0 has Photo and Blog type posts. My site loads 1 photo-type post onto the main page, which is what I want.

I also want to add a link 'Blog' in the header that loads a page of the 'Blog' type posts. When I click the link, I want a page to load with 5 'blog' type posts and the sidebar. At the bottom I want 'next' and 'previous' to load the next 5 posts. I have tried setting the category in my blog posts to 'blog' and then displaying the category but I can't get 5 of them to show up.

I know that this is probably simple, but I have tried all different methods of doing this and I can't figure it out. Is there a simple way of doing this? I see on the example that there is a 'blog' link in the header, does this load 'blog' type posts?
