Change "Read More" Link

Hi

I am having a problem with my "read more" tag. I changed it to read "MORE" in the bottom section and "UNPLUG MORE" in the right and left sections; however, I noticed that not all of the post state the same thing. Please see the below snap shot (www.MankindUnplugged.com). Is there a way to fix this. I am not sure if there is an issue with the coding, but it is very odd.

My other question is whether or not it is possible to change the "read more" link to a rollover or .jpeg (see snap shot below). If so, how and where would I change the coding?
