Default Widgets?

Is there a way to exclude and include certain categories/pages in the sidebar if I use the add widget vs the hardcode that is part of a theme? I know how to do it if I use the sidebar.php/sidebar_left.php that is hardcoded, but when I log into my admin section and start adding widgets, it overrides the hardcode. Once I do this, I can not figure out how to include/exclude these, because the hardcode stays the same.

Any help would be appreciated. Thanks
