Category problems

Hi Guys,

I have almost finished the 1.0 version of my site with your help but I have a problem. I wanted to create categories by renaming the old ones but new category names do not show on the main site apart from two categories! (On the right sidebar the categories are great, but not ibelow the header!) Why is this and how should I fix that? You can check it out here: http://www.caloriecatcher.com

Also there is a category which I can not delete in the admin panel since no box is associated with it in the category list, therefore I can not check the box when I want to delete that category !
