Confused with how this theme is working...

OK..

LOL Just when I got a handle on the original revolution themes comes these beauties

I'm using the Office theme in a static site. How can I make the MENU - which on the demo is Category, Category Featured, Home...

How can I make these static pages with drop downs?
I tried creating a page but it got put WAY above by the subscribe button which is confusing...
