Change Time Zone for Date Display?

This should be fairly simple - but I am at a loss. My question concerns "Genesis>Theme Setting>Primary Navigation Extras>Display the following: Today's Date"

I have a client (www.redeemyouthcare.org) that wants the date displayed but emailed me at 8:30PM Eastern Time on 10/21/10 stating that date in the nav bar was already showing 10/22/10. I need to change the programming to reflect the current date according to the Central Time Zone but cannot locate where to make this change.

Any advice would be welcomed.
