Blog Page and Nav bar

Quick question I was trying to setup the Blog page on the Corporate theme and Im not sure how to get it to pull from cat 3 and only cat 3 and the second part of the question is in the nav bar it shows Categories and drops down showing BLOG and Uncategoraes I need to know how to remove them from the Navbar so they don't show up there. I only want the blog to pull from one Cat this way not everything ends up there.
