Adding new categories drop down

Adding new categories drop down

Really like the new theme.

I'd like to have two drop down menus for two different top level categories with sub-categories appearing when the menu bar link is clicked. I'd also like to replace 'categories' in the menu bar with the names of the two top level categories.

Is it possible to do this and if so is there advice anywhere else in the forum about how to implement it that you can point me to? I've tried searching and couldn't find anything but maybe I'm using the wrong terms.
