Default Two category questions

My website is at http://tinykorean.com

I saw that you can change the Template for a Page to full width (effectively removing the sidebars completely, making the content span the entire width of the table) - is it possible to somehow modify this theme so I can make a new post within a certain category and have it do this? I want to make a Photo of the Day category, and have it look something like this:

And if this is possible, is it also possible to exclude this category from the gray subnavigation bar, and have the remaining categories intact?

Or would I need to set up a different Wordpress in a different directory for this?
