Default Moving Genesis site to WP multi-site AND changing hosts

We've come to the conclusion that we have to break with Bluehost and switch to a VPS for performance reasons. We've made the decision to go with Hostgator VPS Level 3.

At the same time, we want to move to WP multi-site.

We plan to (roughly):

1) setup the VPS (install WP, etc)
2) move our themes/plugins from 1 server to the other
3) backup/restore our mySQL data

My question is this: should we configure our new VPS for a basic WP (not multi-site), do the restore, and subsequently change the VPS configuration to multisite? Or can we setup the VPS for multi-site and restore our basic WP data from a non-multi site setup? Is there something in the basic WP data that would conflict with the WP multi-site data structure?
