Default How to hide pages?

I am setting up a site where I use WP as a CMS with Magazine Church to manage a lot of pages. The site is about 96 horses who is used by the Swedish Cavalry. It is really a breeze to set up the menu and sort it to display the menu and sub menu. But on a certain part I want pages not to show in the menu, just be published so I can access them via links on a special page.

Anyone who know if this is possible and how to do it?
