final steps to complete

First let me start by saying thanks to all who have helped me through this process of setting up my web site.
You guys have been awesome! now im almost done and im just doing small tweaks so i need just a few more questions answered.

1-is there a way to remove where it says (Filed under) on all post? (i dont want that showing)
2- is there a way to exclude Uncategorized from the sub menu (even if there is post in it)?


and last and biggest pain in the butt............ on the (featured content gallery) is there a way to make it ONLY show from a certain post or category? (in other words what i dont want happening is everytime i post something it automaticly tries to show a pic from that post and if that post doesnt have one then the screen goes black.

So what i would love to do is assign 3 or 4 post to it and thats it i dont want it changing unless i want it to. You know what i mean??
