Customizing individual category page content in Genesis

Am just about to commit to Genesis, but have this one issue to sort out: how to customize individual Category page content? We have over 60 categories (forgive us, most are countries...it's our travel blog) and growing. I'm looking at methods to customize the page content on each individual category page.

Ideally, I'm looking for this feature: this approach, but I'll take a reliable Genesis-based workaround that hopefully wouldn't involve dozens of separate PHP category page templates.

Any thoughts on an approach/solution? Or when this feature might appear in Genesis?
