Default I have too many categories

Over time I've created 31 categories on my site. I only need ten but I fear changing or scaling down because I don't understand how to do it without getting thousands of crawl errors in Google Webmaster Tools. I don't know the consequences of having lots of crawl errors but I figure they're probably not good.

Does anyone know? Is it okay to change the categories of your posts. Does anyone know how to clean up the 404 page not found errors? Right now I have over 1,000 and don't have a clue what to do about it.
