setting up an of line site

Hi, I would like to be able to edit and customize my themes off line and preview what the would look like online. Is that possible. If so what you recommend to use, I'm not really keen on using Dreamweaver as it seems very complicated. I use a mac so what would recommend and how would I set this up.
