Default This may be asked already..

When I make a post on my homepage, underneath the title I get the "Posted on September 14th, 2011 by admin," and below my post, it always says filed under: uncategorized.. Is there any way to make a post so that none of this stuff doesn't come up and it looks more professional?? Thanks in advance!
