Customize Archive Page

We've enabled an Archive Page on our site and were wondering how we might go about making changes to the content displayed on this page.

Such as:

*Excluding all / specific Pages
*Restricting # of 'Recent Posts' displayed
*Display 'count' to the (R) of Monthly Archives

Any info is greatly appreciated!
