Category Summary

When I click on a given category It displays the full text for every article in the category.

Not a bad thing, but I might have 10 articles in a category.
I'd like to list the titles and some teaser text for each with links to pages with the individual articles.

How can I do this?

Additional I see that each article has a unique page name for example
http://www.valleybugler.com/?p=15
How can I make the pages names more descriptive such as
judys_restaurant_turns_25.php < or anything that have descriptive text in it?
