Default Do I have to do something specific to set up my blog?

I'm not sure you can help, but I am a getting more and more perplexed and I'm not sure where else to turn. I can't find any info online or tutorials that seem to answer this question.

I've done the bare minimum blogging in the past with a blogspot blog, but that's the extent of my blogging experience. So I am definitely a novice! We bought the WordPress theme because it seemed that setting up a website was relatively easy and we want to create a website for our small business. We were under the impression that we could use the Mocha theme to create the website and also have a blog on that website. But we don't want it to be a blog-based site. We want a website with one page as our blog. I imagine I can do this, only I am not sure of the proper way to do it.

I have created about 20 pages for our website (not blog post-type pages, but pages where the content will not change). I am very on final edits for the creating part (copy, images, layout, etc) and it's looking quite good. We're excited! I would like to launch tomorrow or Wednesday if possible (if everything works properly, of course), but I have NO idea how to set up one of the pages as my blog (and have the rss feed and all that so people can see the blog and get updates, etc).

I created a page titled Blog, but the thing is I do NOT want the landing page for the website to be the one with blog posts (I want my Home page to be the page everyone comes to/lands on when they arrive) and I know, thanks to a theme forum, that I'll need to change some settings regarding that page once I publish the website. But if I do this, how do I have one of the pages on my website be my blog? And what info would I need to provide to Feedburner or other service (just the permalink url for the page I want to be my blog)? Or do I need to set up a blog through Wordpress and then link that back to my website?

I know this is a long question, but it has me completely stumped and I've spent hours trying to figure it out to no avail. I created a subscribe to blog updates button, only I'm not sure how that will work if I can't figure out how to get a blog set up (which means, I'm working backwards I suppose, but that seems to be the way my brain works - or doesn't).

I hope that makes sense and I apologize if this is not the forum for such a question, but I have no idea where else to go. I need to get our business site up soon, if possible, as we have a few workshops and classes we're offering soon.
