How to build without going live immediately?

Hi, This is my first time using WP and I really like Genesis. I just can't figure this one thing so far.

I'm moving pages from one site to this new blog. I want to move everything, do the redirects but not have any of the new stuff go live until it's all moved.

How would I do that? I'd like to build everything then with one click have the whole thing go live when I'm done.

Is that too much to ask or is it possible? If so, how so?

Any help is appreciated.
