Pre-Purchase Questions

Hi, After days of research, I decided Genesis is the best way to go. I picked a child theme that is fitting for my outdoors travel site (it sounds like I shouldn't mention it here since theme support isn't offered before purchasing), but I can't tell from the demo if I can do the following things without knowing how to write code. (I only know a little html and mostly rely on copy and paste from html sites)

Is there a function that allows me to add captions with photos in my posts?

Can I add more categories to the navigation ? I think there's five and I may need seven.

Can ads (Adsense and ad space purchased by sponsors) go anywhere besides the sidebars/widgets? For example, a leaderboard just above or below the banner?

Is my logo added to the banner in place now in the child theme? Or do I need to make a new banner?

Finally is Genesis with a premium child theme a good choice for someone new to WordPress who wants to get the first pages of a site up within a few days? I've been using a wysiwyg for years and writing only a little html but want to create my new site with a framework/theme such as yours that is relatively secure, has clean code and looks professional. I'm thinking it will help to use Synthesis as my host since I'm new to all of this and this way the host is in tune with the themes.
