Default New site - don't want live yet but is published

Hi, I set up my sites yesterday with Genesis and child theme, and they are already viewable online. I must have hit the wrong button somewhere. Is there a way to make them
go un-live? If not would setting to "no-index" be a good idea so Google and other s.e.'s don't
pick up yet - I'm thinking this could hurt SEO, not to mention it's rather embarrassing.

If I can unpublish the sites and keep them down while building them, is there a way to preview how they will look without special plug ins?

Please advise or post to a thread or instructions on how to do this. I tried searching the forum but probably not using right search terms.

Also, not sure if this will complicate or help the matter, but I'm migrating from GoDaddy to Host Gator today - should have searched forum before choosing my host!
