All you're changing is the functions.php and style.css files in your child theme, which you've probably already edited anyway for other changes you've made to your site. If those two files are updated in a future child theme update then you'd have to merge any changes you've made along the way. Fortunately, that doesn't happen very often with StudioPress themes.
Updating Genesis doesn't affect your child theme so you'd be okay there.
I haven't tried this yet with Genesis 2.0 but Marc, another commenter on that blog post, said he's going to give it a try this weekend and see what happens.

Sounds like there's something interfering with your functions.php file. Are you able to make other changes to functions.php and they take effect?

For the menu:
.menu-main-navigation-container {text-align: center;} #header ul.menu {display: inline-block;}
RE the social icons, I don't think you'll be able to stack them vertically without pushing the nav menu further down, but I could be wrong about that.

I'm just guessing here, but it could be that no one has responded because this idea seems rather unethical. Whether or not a person "likes" something with their Facebook account should be entirely up to them, and not as a result of them clicking on a link to a Facebook page. Beyond that, I don't see how it would be technically possible to do that, because I think it would involve some level of control over their Facebook account.
