Its a bit complicated because the menu has so many classes:
I suggest you install the Firefox addon, Firebug and add change the values for each classes properties in real time using your browser before editing the style.css file.

1. Install the Genesis Simple Sidebars plugin.
2. Another option is to install the Widget Logic plugin and add the is_page('contact') conditional tag.
You could also use the page.i.d is_page('007') replacing 007 with your contact page i.d.

.home-featured-right
you'll find all the code that applies to that widget and you can check the padding which may be the problem.
Example:

Not sure where it is unless i spent some time looking but it's in there somewhere which is why Firebug & Notepad++ helps so much.

Yes the speed can be altered and you can use any slider with Genesis. Easing slider "Lite" is another you may consider.
Size can also be reduced.
Can the call for action banner be used to send an email to your phone?
There may be a plugin for this.
I see on the menu bar that there are 6 categories can this be increased to 8 or 9?
Yes, you can add as many as will fit in and also include more in drop down menu's.
Can ecommerce pages be added to this or should a product shop be created as a separate site with links to it?
Genesis provides a WooCommerce integration and you may use other eCommerce plugins like Easy Digital Downloads.
You can add a widget area anywhere in the theme and add a call back button there using a shortcodes plugin, code or some type of call back plugin.

You can also install the Genesis Simple Hooks plugin and unhook the genesis_footer hook as well as add HTML to any footer area.
